Are you tired of eating the same poha, or upma or khichdieveryday? With the lockdown, it is indeed difficult to gorge in samosas or wadas from outside. You can always opt for eggs, make an omelette or sunny side up, which is fairly quick and easy, and also extremely healthy. Eggs have 7 grams of protein, and only 1.5 grams of saturated fat. Hence goes the saying, “Sunday Hoya Monday, rozkhaoAnde”
However, if you’re bored of eating the same egg recipes everyday for breakfast, here are 5 quick, easy breakfast options with eggs:
1) Egg bites
This is an extremely cool option to try out, especially for a breakfast choice.
Add 4 eggs in a bowl. Whisk them well. Add finely chopped onion, tomatoes, chillies, cabbage and carrots.
Heat some oil in an ‘appam’ tawa.
Pour the batter in the appamtawa, and fry both the sides evenly.
Dip it some tomato sauce, and voila! Your crunchy egg bites are ready!
2) Egg Noodles
If you’re in a rush, and are tired of eating omlettes and sunny side up every day, try the particularly simple egg noodles. And the best part? You don’t even need actual noodles for that!
Whisk 2 eggs well, and pour oil in the pan. Spread the whisked egg and let it simmer on the gas.
After both the sides are cooked, pour it on a flat surface. Take a knife, and slice it into thin strips. Sprinkle some salt, pepper, coriander/ parsley and tomato sauce.
Your egg noodles are ready to eat!
3) Crepe Egg Roll
This is a tummy filling option, perfect for an elaborate Sunday breakfast.
In a bowl, add 2 eggs, 1 cup milk, flour, 1 tea spoon baking soda, and salt, and whisk it to make a batter. In a pan, heat ghee or oil, and pour the batter.
In another bowl, add 2 eggs, chopped onions, tomatoes, chillies, salt and whisk it well.
Pour it over the bowl and let it cook simultaneously. Cook evenly on both the sides.
Flip it and add some mozzarella cheese.
Roll it and set it aside for five minutes. Your Sunday is set!
4) Classic Deviled eggs
This is a really quick recipe, ideal if you have a long day ahead, and are unable to make a proper breakfast.
In a saucepan, boil 5 eggs and peel them. Remove the yolk from each.
In another bowl, add the boiled egg yolks, 1 cup mayonnaise, chilli flakes, 3 tablespoon mustard, salt and pepper. Mix it well.
Pour the mixture in an icing cone and add them in the boiled egg whites. Top it with pepper and parsley. Your classic devilled eggs are ready!
Try a really quirky South Indian way of cooking eggs.
Whisk an egg in a bowl. Add chopped onions, and bell peppers, salt, pepper, green chillies and again whisk it.
In a spatula bowl (used for tempering) heat oil. Pour the mixture and immediately fold the sides, in the shape of a ‘vada’. Fry well.
Put the Omelette in the plate, add some coconut chutney and tomato sauce. The simple yet filling recipe is ready to eat!
