We’ve officially entered monsoon season, which means the temperature has fallen, the days are becoming shorter, and salad suddenly doesn’t look as tempting as a lunch option. It’s time to put some soup on the table! It may come as a surprise to learn that not only are soups nutritious, but types of soup have also been shown to aid weight loss. Soups are a part of healthy diet, here are few recipes given to you by Siddhi Deshpande-Takalkar, one of the best nutritionists in Pune.
Beetroot, Carrot and tomato Soup:
- 1 tsp butter
- 1 bay leaf
- 2 clove garlic
- 1 inch ginger
- 2 shallots (halves)
- 1½ cup beetroot (cubed)
- 1 carrot (cubed)
- 1 tomato (chopped)
- ½ tsp salt
- 2 cup water
- 1 tsp pepper (crushed)
- cream for garnishing
- mint for garnishing
- To begin, melt 1 tablespoon butter in a pressure cooker and sauté 1 bay leaf until fragrant.
- 2 garlic cloves, 1 inch ginger, and 2 shallots, sauteed until it shrinks slightly
- additionally, saute for 2 minutes with 112 cup beets, 1 carrot, 1 tomato, and 12 teaspoon salt.
- Pressure cook for 3-4 whistles after adding 2 cup water.
- Drain the water and allow it to cool completely.
- Blend the pressure-cooked veggies to a smooth paste in a blender.
- In a large kadai, pour the beetroot paste.
- Pour in any water that has accumulated while the vegetables have been cooking.
- Mix thoroughly, adjusting consistency as needed.
- When the soup has to a boil, add 1 teaspoon of pepper and stir well.
- Finally, serve the beetroot soup with cream and mint on top.
Mix Veg Soup
- 3 tsp oil
- 3 clove garlic (finely chopped)
- 1 inch ginger (finely chopped)
- 2 tbsp spring onion (chopped)
- 1 carrot (finely chopped)
- 5 beans (finely chopped)
- ½ capsicum (finely chopped)
- 2 tbsp cabbage (finely chopped)
- 2 tbsp peas / matar
- 2 tbsp sweet corn
- 4 cup water
- ¾ tsp salt
- 1 tbsp vinegar
- ½ tsp mixed herbs
- ½ tsp chilli flakes
- ½ tsp pepper powder
- 2 tbsp spring onion (chopped)
for slurry:
- 1 tsp corn flour
- ¼ cup water
- To begin, heat 3 tsp oil in a big kadai and fry 3 garlic cloves, 1 inch ginger, and 2 tbsp spring onion.
- Stir in 1 carrot, 5 beans, and 12 capsicum for a minute.
- 2 tbsp cabbage, 2 tbsp peas, 2 tbsp sweet corn, slightly sauteed
- 4 cup water and 34 teaspoon salt are now added. Mix thoroughly.
- Cook, covered, for 5 minutes or until vegetables are tender.
- 1 tsp maize flour and 14 cup water should be combined in a small bowl.
- Make sure there are no lumps in the mixture.
- Pour in the corn flour slurry and bring to a boil for 3-4 minutes, or until the soup has thickened.
- 1 tablespoon vinegar, 12 tablespoons mixed herbs, 12 tablespoons chili flakes, and 12 tablespoons pepper powder
- Mix thoroughly to ensure that all of the spices are evenly distributed.
- Finally, serve vegetable soup with 2 tablespoons spring onion on top.
There are many other healthy soup recipes that you can try and add to your diet for a healthy lifestyle. Always remember do not strain the soup as it may lose its nutritional value and drinking soup will not benefit your health. The fiber will be removed by straining. The nutrients that are left are determined by the substance. It’s difficult to say. Use a blender or an immersion blender to make things incredibly smooth.
